These Christmas Tree Cupcakes are a fabulous festive treat and so easy to make! Whether you need a centre piece for your party table or its a cold Sunday afternoon and you need something to do these are perfect for any occasion! The best thing about these? They are easily adaptable to suit any flavour tastes. I made these using a simple Vanilla sponge but could use Chocolate or Coffee or even a Gluten Free sponge would work brilliantly.
Red and Green are those staple festive colours and a great way of making any cupcakes look festive, however there are Christmas cupcake cases out there you could always use.
Using different sprinkles will create different effects of 'Christmas Lights'. Multi - coloured 100s and 1000s give the bright colourful twinkle lights or the Gold sprinkles brings the idea of warming lights OR you can go all out and use something like Smarties which gives the extra chocolatey hit.
This is my go to recipe for a simple, Vanilla sponge that works every time. It is so versatile and can be used in other ideas and cupcakes. You will probably see it pop up time and time again in other exciting recipes to come!
Step One| Pre - heat your oven to 180'c/ 160'c fan/GM 4. Line a 12 hole muffin tin with cupcake cases and put to one side.
Step Two| Cream the butter and sugar together until it is pale, almost white, and fluffy. Using an electric hand whisk or a stand mixer this will take around 5 minutes. By hand, it may take a little longer.
Step Three| Add one egg at a time along with 1 tbsp of the flour, this will help stop the mix from curdling, and mix well. When both of the eggs have been mixed in mix in the rest of the flour as well as the milk and the vanilla. Make sure everything is mixed together well and the mix is light and creamy.
Step Four| Now its time to fill the cases, there are a few ways of making this easier or you can always stick with the traditional way of two spoons or using a small Ice - Cream scoop, this will mean each case has an even amount or you transfer the mix into a piping bag and pipe the mix into the cases, this will also help make sure each case has the same amount. The cases should be about 2/3rds full.
These cupcakes are so versatile, if you wanted you could add a drop of green food colouring making them a Christmas Tree colour and decorate with gold stars.
